try something new

I love to cook and I love to try new recipes. But it seems like for about every 5 new recipes I try- maybe only one of them is a keeper. Well, I have set a record... out of the 2 new recipes I have tried in the last week- both of them will be going into my recipe box!

What qualifies them as keepers? Easy/quick to make, delicious of course and the hubby/kids enjoy them as much as I do. These were both super yummy and the kids and Aaron were commenting over dinner- how much they liked them. Even better- they make a lot, so we had leftovers for the next night, too. Perfect! Chicken Spaghetti
from The Pioneer Women Cooks

Ingredients
  • 2 cups Cooked Chicken
  • 3 cups Dry Spaghetti, Broken Into Two Inch Pieces
  • 2 cans Cream Of Mushroom Soup
  • 2 cups Grated Sharp Cheddar Cheese
  • ¼ cups Finely Diced Green Pepper
  • ¼ cups Finely Diced Onion
  • 1 jar (4 Ounce) Diced Pimentos, Drained
  • 2 cups Reserved Chicken Broth From Pot
  • 1 teaspoon Lawry's Seasoned Salt
  • ⅛ teaspoons (to 1/4 Teaspoon) Cayenne Pepper
  • Salt And Pepper, to taste
  • 1 cup Additional Grated Sharp Cheddar Cheese
Preparation Instructions

Cook 1 cut up fryer and pick out the meat to make two cups. Cook spaghetti in same chicken broth until al dente. Do not overcook. When spaghetti is cooked, combine with remaining ingredients except additional 1 cup sharp cheddar.

Place mixture in casserole pan and top with remaining sharp cheddar. Cover and freeze up to six months, cover and refrigerate up to two days, or bake immediately: 350 degrees for 45 minutes until bubbly. (If the cheese on top starts to get too cooked, cover with foil)


Chicken Pot Pie

Ingredients

  • 1 pound skinless, boneless chicken breast halves - cubed
  • 1 cup sliced carrots
  • 1 cup frozen green peas
  • 1/2 cup sliced celery
  • 1/3 cup butter
  • 1/3 cup chopped onion
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon celery seed
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 2 (9 inch) unbaked pie crusts

Directions

  1. Preheat oven to 425 degrees F (220 degrees C.)
  2. In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.
  3. In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
  4. Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.
  5. Bake for 30-35 minutes, let cool for 10 minutes.

I am always looking for new recipes that Darin can eat (no cream soups). I can't wait to try the chicken pot pie! I can substitute soy milk! Thanks for sharing!

Love the recipes...I have 2 recipes very similar to those and they are some of my family's favorites too! I was so excited to see the picture of Addie...can you believe my baby Spencer is a Sunbeam this year too?? His birthday is Dec. 18th, so he barely made the cut off, but it's so wierd!

Im trying the chicken one out this week. Ill let ya know what I think. Thanks for the recipe. And my sister in law made a KILLER apple pie from Pioneer Woman. She has some good recipes thats for sure!
And Addie keeps getting cuter and cuter, if that is even possible.
